Summer Corn and Tomato Salsa 

      I fully believe summer time tomatoes are a gift from the heavens. Lol!

They are so fresh and colorful. And of course the taste is amazing! 

I love adding my other summer time staple, some freshly cut corn. Which I usually grill first.  

The flavors, that mix all together after sitting in the fridge for a few hours, is insane! 

Summer Corn and Tomato Salsa 


4 large organic heirloom tomatoes, chopped 

1/2 large onion, chopped 

4 large ears corn, grilled then cut from cob

1/2 cup cilantro, chopped 

2 garlic cloves, diced 

Juice of 2 limes

Salt and pepper 


1. Grill corn cobs over medium high heat until charred on outside. Cut corn from corn cobs and put in a medium sized bowl. 

2.  Start chopping the tomatoes, onion, garlic, cilantro, and add everything into the bowl with corn. 

3. Squeeze in the lime juice and add the salt and pepper. Adjust seasonings if necessary. Serve. Nom!
