Summertime Avocado Toast 

           When the weather is hot. 

You don’t want to turn on the oven. 

           And you  don’t have the time or energy to make lunch.

      Most of the time, you can find me eating this. 

                        The summer flavors are SPOT on. 

     And everything is SO fresh.

           Look at that beautiful piece of toast. 

It’s calling my name. 🙋🏼

Summertime Avocado Toast 


2 slices bread, I used organic 10 grain 

1 avocado, cut into slices 

1 stalk corn, kernels cut off 

1 shallot, thinly sliced

5 organic cherry tomatoes, halved

fresh basil, juilanned

1 tablespoon EVOO

1 garlic clove, minced 

1 tbsp red wine vinegar

salt and pepper, to taste


1. Cut corn off stalk and put kernels into a small bowl. 

2. Slice shallot, tomatoes, basil, and garlic. Add to bowl.

3. Add EVOO, vinegar,  salt, and pepper to bowl. Toss everything together gently. 

4. Toast your bread and top with avocado. Carefully arrange corn/tomato mixture on top. Nom!
