Caesar Salad with Grilled Salmon and Avocado

We grill a couple times per week in the summer time.

Personally, I don’t eat meat, but LOVE seafood, so whenever it’s my choice to grill I ALWAYS choose Salmon.

We usually make one huge filet and will have leftovers for the next night.

But, I love using the leftover salmon for SALADS!

This is one of my go to ways to make a fantastic salad.

Caesar Salad with Grilled Salmon and Avocado



2 tbsp garlic powder

1 tbsp sriracha

1 tbsp onion powder

2 tbsp brown sugar

Salt and pepper to taste

2 tbsp parsley, chopped


10 romaine leaves or 1 head

2 cups spinach

1/2 cup croutons

Half an avocado, sliced

Parmesan cheese, shaved

Caesar Dressing:

1/2 cup veganaise

1 lemon, juiced

1 tbsp Dijon mustard

1 clove garlic, minced

2 tsp anchovy paste

1 tbsp honey

salt and pepper, to taste


1. Mix together all seasonings, except parsley, for the salmon and grill at about 350F for 20-25 mins. Salmon is done when flaky. Sprinkle with parsley.

2. Mix together all ingredients for the dressing and pulse in a food processor until combined. Taste the dressing to see if you need to adjust seasonings. Set aside while you assembly the salad.

3. Lay lettuce and spinach down. Add some of the grilled salmon. Pile on croutons, Parmesan, and avocado. Drizzle dressing on top. Nom!
