These potatoes are something else.
They were SOOOOO crispy and had the perfect saltiness thanks to bacon fat aka bacon grease.
The bacon fat literally made the potatoes so great and I can’t wait to make them again.

8-10 new potatoes, halved
2-3 tbsp bacon fat (drained fat from making bacon)
Fresh ground sea salt (I used black Hawaiian), to taste
Fresh ground pepper, to taste
1 tsp dried parsley
1 tsp dried garlic
1 tsp dried onion powder
1 tsp dried thyme
1 tbsp extra virgin olive oil
1. Preheat oven to 425F. In a medium bowl add potatoes and all ingredients except olive oil. Mix by hand until everything is combined.
2. Take the olive oil and spread it on to a sheet pan making sure to cover completely. Add potatoes in an even layer with potatoes not touching each other.
3. Bake for 20-25 mins. Flip the potatoes over half way through cooking time.
