Buffalo Cauliflower w/ Blue Cheese Dressing
1 head cauliflower, cut into florets
1/2 cup nondairy milk (I used soy, but use whatever you like)
1/2 cup water
3/4 cup AP flour (can sub gluten free flour)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
salt and pepper, to taste
1/2 bottle Frank’s Red Hot
Blue Cheese Dressing:
4 oz Blue Cheese
1/2 cup mayonnaise
1 clove garlic, minced
3 tablespoons almond milk (or whatever milk you use)
salt and pepper
1 tablespoon parsley, chopped
1. Start by preheating the oven to 450F and lining a sheet pan with parchment paper. Then mix together all the ingredients for the batter except for the cauliflower. Mix together until no clumps are present.
2. Take cauliflower florets and carefully dunk them into the wet mixture. Letting the excess drip off. Then arrange on the sheet pan. Leaving space between each floret.
3. Bake for 25-35 minutes until golden brown, flipping half way through.
4. Mix together all ingredients for the blue cheese dressing and serve with the cauliflower.
