Fudgy Cheesecake Brownies


4 free-range organic eggs

3/4 cup organic brown sugar

1/2 cup grade A maple syrup, divided

1/2 cup organic cocoa powder

1 cup AP flour

1 1/2 tsp vanilla, divided

1/2 tsp sea salt

1 1/2 sticks pasture raised butter, cut into cubes

10 oz good quality dark chocolate, cut into squares

1/2 cup cream cheese, softened


Preheat oven to 350F.

Melt butter and chocolate together either over a double broiler in the stove or in a medium size bowl in the microwave.

In the bowl of a mixer cream together the sugar and eggs. Add 1/4 cup of the maple syrup and 1 tsp of the vanilla. While on a low speed, add the chocolate and butter mixture. Mix together for about 30 seconds.

Gradually add the flour, cocoa powder and salt. Mix just until the flour is incorporated.

Pour brownies into an 8×8 pan lined with parchment paper.

In a small bowl mix together the softened cream, 1/2 tsp of vanilla and 1/4 cup maple syrup. Swirl the cream cheese mixture on the top of the brownies.

Bake for about 30 mins or until the outsides are set but the middle is

slightly jiggly.
