Chocolate Peanut Butter Pecan Balls

These delicious balls of chocolate came about from my love of semi-healthy treats and my need for convenience!

These balls are packed with good for you ingredients like peanut butter, collagen protein, flax, and dates.

They keep you full for a longer period of time so I love having them when I’m on the go. I take one out of the freezer a couple minutes before I want to eat it and my breakfast, snack, or whatever is ready when I am!

With all the good for you ingredients sometimes isn’t always on point. But I’m happy to say they taste like the best peanut butter ball I’ve ever had.

Seriously, they are perfect to take to a party or a dinner. But I usually just have them around for the kids to snack on for a quick after school treat!

Chocolate Peanut Butter Pecan Balls

1 cup Wild Friends Peanut Cashew Super Butter w/ honey, chia, and flax

1/4 cup grade a maple syrup

1 teaspoon vanilla

5 pitted dates

1/2 cup almond flour

2 scoops Vital Protein Collagen Peptides

1 cup raw cashews, soaked for atleast 30 minutes

1 teaspoon cinnamon

1/2 teaspoon sea salt

Dark chocolate topping:

1 cup dairy free dark chocolate chips

1 tablespoon organic coconut oil

1/4 cup pecans, chopped

Blend together all the dry ingredients in a food processor until just mixed.

Add the wet ingredients and pulse until the mixture is the size of peas. Do not over mix, you don’t want a smooth paste.

Roll into balls and freeze on a sheet pan for about 15- 20 minutes.

Melt together the chocolate chips and coconut oil over a double broiler in a large bowl. Do not boil the water, you don’t want to burn the chocolate. Just a light simmer. Melt until glossy.

5. Remove the balls from the freezer and immediately dip into the chocolate. Gently lay them on the sheet pan. Before they harden sprinkle on the pecans. Return them to the freezer to harden. Once they are froze out them in a freezer safe bag for up to a month. Take one out six minutes before you want a chocolate fix and you’re set! But you can eat them straight from frozen also.
