Dark Chocolate Walnut Zucchini Bread
1 cup all purpose flour
1/2 cup almond meal flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon pink salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup maple syrup
1/2 cup unsweetened applesauce
1/3 cup ghee, butter, or coconut oil
2 teaspoons vanilla
1 1/2 cups grated zucchini
1/2 cup dark choc chips (I used half chips and half of a cut up dark chocolate bar)
1/3 cup walnuts
Preheat oven to 350 degrees. Grease and flour a loaf pan.
In a medium bowl add the flour, almond meal, baking power, baking soda, salt, cinnamon, and nutmeg and mix together with a whisk until combined.
3. In another medium bowl combine the maple syrup, applesauce, ghee, egg, and vanilla.
4. Slowly add the wet ingredients into the dry and mix until combined. Gently fold in the zucchini, dark choc chips, and the walnuts.
5. Pour the batter into the prepared pan and bake for 45-55 minutes depending on your oven. Check the bread with a toothpick to ensure doneness.
